Vegetable Cutlet

A sip of hot masala chai and a bite of vegetable cutlet reminds me of Indian Coffee House. I was craving for this for a long time. Finally got a chance to prepare them.


When I was a kid, I used to admire those who prepared cutlets. For me, cutlets were quite a unique thing to have. I thought, it takes lot of effort to prepare cutlets. And thats the reason I have never tried making cutlets. But, finally I did it. It was super easy and I enjoyed making those cute cutlets.



Ingredients:

Potato – 2,medium,cooked and mashed
Other Vegetables - 1 cup ( I have used carrots, peas, beetroot, and cauliflower)
Onion – 1,finechopped
Green chilli – 1,chopped
Ginger-garlic paste - 1/2 tsp
Salt to taste
Garam masala – 1/2 tsp
Bread slices – 2,dipped in water and squeezed to a pulp
Bread crumbs – 100 gms
Maida (all-purpose flour) – 2 tbsp
Oil – for deep frying



Method:

Pressure cook the vegetables until soft. Add mashed potatoes to it.

Heat 1 tsp oil in a pan. Add ginger-garlic paste. Saute for few mins. Add chopped onion and green chilli.Add salt. Saute until onion turns transparent. Add the vegetable mixture. Mix well.

Add garam masala. Mix well. Cook until the mixture becomes dry.

Mix the bread pulp. Adjust salt. Let the mixture to cool down.

Make small balls and roll them into any shape. Make a thick paste of maida and 1/2 cup water. Dip the cutlets in maida paste and then roll them in the bread crumbs. Set aside for sometime (10-15 mins). Deep fry the cutlets until crispy.



Serve it with tomato ketchup.

Note: You can prepare cutlets before-hand and refrigerate them. Deep fry before serving.  Do not refrigerate them for long time. Usually 1-2 days may work.

Masala Peanuts

Blogging after a long time.. I mean serious blogging. Was busy with my studies and I'm still busy.. There is an ongoing event in my blog "Cooking with Whole Foods - Peanut" and I wanted to contribute to this event. But, my busy schedule was holding me back. Last weekend, I got a chance to prepare this super-duper quick snack. Ready in minutes, spicy, and a perfect snack. Just toss all the ingredients and you are good to go.. A great appetizer for parties!!




Ingredients
 
2 cups raw peanuts, I prefer them with skin
1 small onion, chopped
1 small tomato, chopped
3 green chillies, finely chopped
1 tbsp salt
1/2 tsp turmeric
1/4 tsp chaat masala
1/4 tsp red chili powder
1 tsp ground roasted cumin
2 tbsp chopped fresh cilantro
2 tbsp freshly squeezed lemon juice



Method

Take a wok, dry roast the raw peanuts until they turn golden brown. Once done, toss in the other ingredients. Mix well and adjust salt.

Tava Fried Paneer Tikka

Today I'm going to share our last weekend special... "Paneer Tikka".. I've prepared it number of times but this one is tava fried.. And I found it to be bit quick and more tasty, but yeah more oily, when compared to traditional paneer tikka.. So weight-watchers, try avoiding this method.

When it was served for dinner, Sree was so excited with the colorful combination of paneer and veggies arranged in skewers.. And if you've mint chutney  "Wah!" it's a perfect starter and you can easily please your loved ones and guests..


My mom used to prepare in Microwave and even I do but I felt tava fried is more tastier than any other method of preparing tikka..

Let's go to the recipe..!

Ingredients:

Paneer - 200 gms, cubed
Red onion, small  - 1, cut into squares
Cherry Tomato - 4, split into four
Bell Peppers (red,green and yellow), cut into thick wedges - 1 cup

For Marinade:
Yogurt - 3 tbsp
Red Chilli Powder - 1 tsp
Ginger-Garlic Paste - 1 tsp
Turmeric Powder - 1/2 tsp
Cumin Powder - 1 tsp
Garam Powder - 1/2 tsp
Chat Masala - 1/2 tsp
Kasoori Methi - 1tsp, powdered

Lemon juice - 1 tbsp
Salt - to taste

Other:
Oil - for frying
Skewers - 3

Method:

In bowl, mix the ingredients for marinade. Mix well. Add the paneer cubes and toss well so that the paneer cubes are well coated with the marinade. Cover it and let it rest for 1 hour.

Heat a pan, pour 1 tsp oil, arrange the paneer cubes on it. Keep it on medium-low flame. Brush little oil over paneer cubes and turn them upside down. When done, remove from pan and keep on tissue paper to absorb excess oil.

Similarly, repeat the procedure with remaining paneer cubes and veggies.

Arrange them in skewers and sprinkle some chat masala.

Bread Pakora

Sorry to all my blogger friends for being away from blogging. I'm on my visit to India and will be here for another one more month. So, the frequency of blogging will be very low. But I'll try my best to post once in every week atleast.

Today's post is Bread Pakora, a very common Indian street food. And this is my brother's favorite evening snack. But my mom always prepare simple bread pakora where the bread is dipped in batter and deep fried and served with ketchup or mint/cilantro chutney. I thought instead of having pakora and chutney seperately, why not make layers of bread sandwiched with chutnies. Believe me guys, it taste awesome... My brother said "A-1"!!!!! Here you can see him grabbing his piece of bread pakora....

This evening snack options just got tastier and healthier with a wonderful twist of layers of tomato ketchup and mint chutney. A very refereshing and tasty snack and different from traditional bread pakora.
Here we go with the recipe:

Ingredients:

Sandwich Bread – 3 slices
Tomato Ketchup
Mint Chutney
Oil – for deep frying

For the Batter:

Chickpea Flour – 1.5 cups
Baking Soda – 1/8 tsp
Water – 1/4 cup
Red Chili Powder – to taste
Turmeric Powder – 1/8 tsp
Roasted Cumin Powder – 1/4 tsp
Chaat Masala – 1/2 tsp
Salt – to taste


Method:

If required, cut the edges of bread slices. Take one bread slice and spread mint chutney and take another slice and spread ketchup.
Now assembling, keep the side having mint spread over the plain side of tomato ketchup spread slice. Now over the tomato ketchup spread place a plain bread slice. Press it firmly.

Heat oil (for deep frying) on medium heat. By that time prepare the batter in a flat bottomed platter. Mix all the ingredients and make sure no lumps are formed.


Once the oil is hot, dip the prepared bread sandwich in the batter, covering all the sides and edges with batter. Place gently in oil and deep fry till golden brown. Turn and fry on both sides. Once done, remove the pakora from heat and place on a paper towel.

Allow it to cool and cut it diagonally. You'll see the layers of tomato ketchup and mint chutney, a wonderful color combination!!
Serve and impress your guests.
